The thing about cooking, especially for a noob like me, is that it’s overwhelming.
Asking myself what to cook is daunting. There’s a few recipes I’d like to get under my belt but they’re advanced and I don’t want to discourage myself too early in the journey.
So to get the momentum going I started with a simple question: What’s a simple dish I can make right now and would love to eat?
The answer: breakfast!
One thing about me is that I love breakfast and lunch. And eggs.
I started looking for quick breakfast recipes and stumbled on Donal Skehan’s site. Apparently he’s quite a famous chef in Ireland. He also looks like that guy from That 70’s Show.
I subconsciously embedded one of Donal’s charming videos in my head after watching it so many times. So I was keen to make the easy dish when I woke up this morning.
Keen to make the super easy dish this morning I made the dash to the supermarket only to find out it was closed. D’oh! It was Easter Sunday of afterall.
So on the way home I stopped by at a servo and grabbed some Helga’s mixed grain bread.
The photo above is from my second attempt. I was still hungry after the first try and I wasn’t satisfied with how it turned out (the bottom was burnt boo hoo).

What I learnt
- Smearing oil on the bread before pan frying resulted in a more crunchy and hearty toast
- After 1 side has golden browned, flip over and pop the egg in the hole right away.
- (On my first attempt I popped in the egg AFTER the 2nd side was golden brown. This resulted in burning the 2nd side, as it had more cooking time.)
